We understand how important these Notes are to you and syncing them with your Google account. We would want to start with a couple of easy steps, like turn off Notes syncing and restarting your computer, or even sign out of your Google account in System Preferences > Internet Accounts, restart and sign back in and test the syncing again. You could also temporarily store notes on your Mac while you're out in the field, and then manually resync them to your Google account.
